Who else is pumped that the days are getting longer?
I’m such a day person. Sunshine is good for the soul and good for productivity!
Today was quite the uneventful one. I did go into the elementary school to help with Art Club this morning though. I made a wicked cool shrinkie dink. Later on, Michelle and I popped over the the gym. The workout was a 40 minute incline killer on the treadmill. I made Michelle do it with me so it wasn’t so bad We walked on a 15% incline and increased from 3 mph to 4 mph for 40 minutes.
Today’s eats include…
Banana oats topped with sliced banana and carob cashew nut butter.
Salmon and pepper frittata topped with pico de gallo. I let Michelle fancy in the kitchen today. She did a great job! We also had sliced apples and lots of grapes on the side. We polished an entire bag throughout the day. oops.
Salmon and Pepper Frittata (serves 2)
-2 large eggs
-6T egg white beaters
-1C mixed peppers
-1T olive oil
-spices: oregano and cilantro
Tonight we invited Julie [Mrs. Ibar from Art Club] over for dinner. Her husband is a chef so I was crossing my fingers I didn’t have a flop tonight. Michelle suggested that we make paella again and but we were all out of Saffron. It’s okay…because we settled for a close relative…Jambalaya!
Jambalaya (Serves 4-6)
-1C brown rice
-2C chicken stock
-2C leftover pork roast (substituted for chicken), diced
-2C frozen shrimp
-2C peppers (green, yellow, red, and orange), diced
-1 large onion, diced
-1 can diced tomatoes
-1 clove of garlic
-1T olive oil
-1T worcestershire sauce
-spices: 1/2t thyme leaves, 2 pinches of salt, 1/2t pepper, 1/2t mustard powder, 1/2t garlic powder, 1t parsley, and 1/2-1t cayenne pepper (depending on how spicy you want it!)
Directions: In a large wok, begin by sautéing diced veggies in 1T olive oil. Next, add can of diced tomatoes, rice, and chicken stock. Bring to a boil and reduce heat to medium. Add in spices. Continue to let simmer uncovered for 30-45 minutes. The rice should expand and soak up most of the moisture.
Next time I would definitely use larger shrimp and just one cup of rice (I used 2). The ratio of rice to veggies was too high. Overall it was pretty tasty for a first-timer!
Carob Peanut Butter Banana Fro-Yo (Serves 2)
-3/4C fat free vanilla yogurt
-1 frozen banana
-1T peanut flour
-1/2T carob powder
I have mastered the art of fro-yo making. Carob powder + peanut flour = Reese’s Peanut Butter Cup but way healthier!
