And oh, have I missed her!
After a 43 minute flight from Minne to Milwaukee (which I do have to add, I thought I was going to toss my cookies due to the epic wind factor and turbulence), I was finally able to charge up my camera last night! yippie!! And just look what I’ve been missing out on for the past two weeks.
I should probably give some credit to Mr Golden Sun for being so fantastic this morning. Who is psyched that the days are getting longgggger?? Me Me Me!!
Because I am only home for a few days, the Mama and I have to make efficient use of our time. Step 1: fuel with an amazing breakfast inspired by Ashley from The Edible Perspective. Step 2:Vamos!
I have been drooling over Ashley’s Breakfast Bakes for the past couple of weeks, but sadly my poor college self has not had the proper dish to try it with! Look what I found….
Heck yes, I need to invest in one of these little suckers. This dish would be perfect to make a personal sized socca pizza in…..hmmmmmm, I think I am brewing up some ideas.
Baked Blueberry Oat Bran
-1/3C Oat Bran (I used Hodgson Mill)
-3T vanilla almond milk
-1/2 mashed banana
-1/4t baking soda
-1/4C fresh blueberries
-1T egg white substitute
-3 shakes of cinnamon (or more if you’re feelin’ it)
1. Preheat oven to 375 degrees.
2. In a medium sized bowl, mash 1/2 banana and mix in almond milk and egg white.
3. Add the rest of your ingredients. The consistency should be a little thicker than cooked oatmeal.
4. Spray a personal-sized dish with nonstick cooking spray and poor in your mixture. I used a 6×6 ceramic dish that is about 3/4 of an inch deep.
5. Even out your batter and pop it in the oven for 20-23 minutes depending on how deep your dish is.
MMMMMMMMMMMMM. I think I found my new best friend. Sorry raisins….I am surprised I was able to wait the 23 minutes of baking + 10 minute photog. session before devouring. So spongy. So delish. Sweet, but tangy.
No breakfast is complete without…TOPPINGS.
I drizzled on some Justin’s Chocolate Hazelnut Butter + Peanut Butter. I warmed them in the micro for about 20 seconds to make them drizzle-able. I also added some sliced nanner and lots of raisins.
Dang. That was good.
Plans for the Day…
Hey it’s President’s Day Weekend….We need to use and abuse these sales. I haven’t seen a Mall in a really long time. WATCH OUT!
