Blueberry Chia Sauce meets Banana Oats….
I decided to do a little experimenting with chia seeds this morning. I’ve found that chia seeds expand and become gel-like if you soak/cook them in some sort of liquid. 1/2T chia seeds almost doubles the size of my typical oat mixture! So, I figured I could thicken some blueberries to create a yummy topping by mixing the two together! Success!

Blueberry Chia Sauce
-1/4C blueberries (I used frozen)
-1/2T chia seeds
-Directions: In a small sauce pan, heat all ingredients together on low-medium heat. Stir your sauce frequently so it doesn’t burn to the pan. I cooked mine for about 3ish minutes. Before serving, I let it sit in a small bowl for an additional 3-5 minutes to further thicken.
I am excited to make different variations of this sauce: mango, strawberry, raspberry, MMmm! Also….to use it as a topping on different types of food: pancakes, waffles, frozen yogurt, ice cream, & Greek yogurt.
This morning, I made the sauce first, and then used the same pan to cook my oats in.
Banana Oats with Blueberry Chia Sauce
-3T rolled oats
-3T oat bran
-1/2T chia seeds
-1/2 large nanner
-1/4C vanilla almond milk
-1Cish of water (I didn’t actually measure)
I did a 4 mile loop towards downtown. I was presently surpised to see lots of people up and at it this morning despite the clouds. This is a photo of St. Anthony Main. She may look ugly right now due to bare trees and gross mud/snow covered grass, but during the summer this is one of my favorite spots for dinner!
