One question in particular that I have been getting quite frequently is about the “packing of my lunch” during the week. As you know, I am a student, but I also have a job, an amazing internship, and I volunteer! Here’s my typical Monday routine along with a peekski inside my hefty lunch box (which is actually just a reusable grocery bag).
8:00 AM: Good Morning San Francisco! (In a Danny Tanner voice)
8:15 AM: Leave for the gym—>Like us on facebook The duration of my workout is normally 40 minutes to an hour, depending on what I have planned! Today was 20 minutes of cardio + 30 minutes of weights.
9:30 AM: Workout complete—> make breakfast. This morning I had a bowl of Perfect Oats and way too much coffee for my own good.
I try and hit the shower by 9:50 and give myself until until about 10:30 to get ready, check emails, finish up some homework, write a post, etc!
10:30 AM: Put together my lunch/dinner/snacks. This normally doesn’t take too long, because I pre-make all of my grains on Sundays. I have also been buying a rotisserie chicken, which I shred and package in tupperware for easy access!
10:50 AM: Leave for class numero uno! I have a little over a mile walk to class, so depending on the weather, I may have to give myself a bit more time for the traitorous commute. JK–> it’s really not that bad! I actually prefer walking to class, as opposed to taking the bus!
12:05 AM: Class #1 ends and I eat my first snackie of the day; although, sometimes I get antsy and eat it during class. Today it was a big, juicy Golden Delicious Here are the three snacks I packed for today…
12:20 PM: Class #2 begins and ends at 1:10 PM. By this time I am starving…. I walk over to work 1) because I have a meeting at 1:30 and 2) I need to refrigerate some of my foodies. The second I get there, I scarf my lunch:
Lunch: Spinach Salad w/ Rotisserie Chicken
Dinner: Spiced Brown Rice and Beans
In the mix we have ~1/2C cooked brown rice, 1/4C black beans, and 1/4C edamame. I spiced it with a few shakes of cumin and cayenne pepper with fresh cilantro on top!
Along side my dinner, or shortly after, I will have snack #3 = D’Anjou Pear.
6:10 PM: Night Class
I am home by 8:00 PM at the latest and ready for snacks #4, #5, and/or #6 depending on how hungry I am! This is when I usually make fro-yo, have another piece of fruit, or just eat a handful of raisins!
The rest of my night is spent doing my homework, catching up on emails, blog surfing, or what ever comes my way! I try and go to bed around 10:00ish. Yes, ish. This means BEFORE or after.
Here are a few takeaways:
1. I always pre make grains at the beginning of the week. This makes meal planning a lot easier and I don’t waste my time making brown rice every single day when i could just make it in bulk!
2. I always cook up a protein in bulk at the beginning of each week to use throughout the rest of the week. This time I just so happen to buy a pre-made rotisserie chicken instead. I will often bake a bunch of chicken breasts or salmon filets and throw them in tupperware for later!
3. Tupperware is my biff.
4. The amount of money I save on food because I make a point to pack lunch, dinner, and snacks is just unbelievable. Not to mention, if I didn’t do this, I would be wasting money on all of the fresh produce I buy because the shelf life is not very long!
*note: I don’t post everything I eat; for example, lots of handfuls of raisins/grapes.
