Anyways, today was my first day nannying of the summer! For the next few months, don’t be surprised if you frequently start to see three beautiful blonde-haired children pop up in my posts. I promise I didn’t steal them! This will be my second summer nannying for my family and I am already loving it! Henry is 11, Maddie is 10, and Charlie is 6. I couldn’t ask for a more down to earth, positive, fun, inspiring family to spend my summer with I’m pretty much a live-in paparazzi, I just can’t help taking bajillions of photos of these gorgeous kids.
At least I had some helpers [who were coincidentally wearing the same shirt]!
Our cookies featured a few nontraditional chocolate chip cookie ingredients: oatmeal, whole wheat flour, and flax seed meal. We cut back on the sugar and incorporated whole grains. Note: this recipe is a child approved healthy chocolate chip cookie. check.
Healthified Chocolate Chip Cookies
adapted by an EatingWell recipe
-1/4 C all purpose flour
-1/2t baking soda
-1/4C vegetable oil
-1/4C butter, softened
-1/3C granulated sugar
-1/3C brown sugar
-1 jumbo egg
-1t vanilla extract
-2/3C semi-sweet chocolate chips
1. Preheat oven to 350F and grease 2 cookie sheets with non-stick cooking spray
2. In a large bowl, mix together dry ingredients. In a small bowl, mix together wet ingredients. Then, pour wet ingredients into dry ingredients and stir.
3. Using a cookie scoop [an ice cream scoop worked quite well], form small balls and evenly space onto greased the cookie sheet.
4. Bake for 10-12 minutes or until the cookies begin to brown.
Those guys were gobbled down straight out of the oven! I don’t even think they realized they were whole grain! Not a single complaint. NADA. Zilch.
