Earlier in the week I made a big batch of brown rice and I needed to make some sort of side dish for a mini BBQ. I scavenged a few ingredients from the fridge, and this is what I came up with: *note: I honestly didn’t measure any of this, so these are all estimates!*
Crunchy Brown Rice Salad with Homemade Lemon Vinaigrette Dressing
Crunchy Brown Rice Salad
-2C cooked brown rice
~1/2C diced green onion
~1C finely diced red pepper
-1 can garbanzo beans, rinsed
Method: Mix together all ingredients in a large bowl.
I do have to say that fresh cilantro would have made this dish more outstanding than it already was. I am such a sweet tooth kind of girl, so it was nice to make a savory-ish side dish. The crew I made this for seemed pretty happy, which makes me happy. I am always worried that other people won’t like what I make, especially when I whip a recipe outa my be-hind. Normal people are used to store bought food, which in my opinion is hard to mess up. *add 2C water to this box of pasta and let simmer for 20 minutes. vuala* No thank you.
