I have been experimenting with my peanut butter ball recipe. Last week I made peanut butter (ball) bars and today I made Peanut Butter (ball) Cups!
It really was love at first bite.
I used a mini muffin pan because it is the perfect size to to make a healthier version of peanut butter cups.
-no added refined sugars
-dairy free (if you use non dairy chocolate)
I added some dark chocolate and shredded unsweetened coconut to the top for garnish. Then, I popped them in the freezer for a frozen treat!
Just follow this peanut butter ball recipe, but instead of forming them into balls, just press them down firmly into a small cupcake mold.
Yah know….these would make a delicious treat for a long travel day.
