Use your slow cooker to make this decadent Crock Pot Samoa Steel Cut Oatmeal made with a coconut oatmeal base topped with homemade date caramel and a drizzle of chocolate!
As I am writing this I’m staring out my window looking at a beautiful 60 degree sunny day in February. I feel like the entire country has some weird weather right now! We be breaking records here in the cities! Anyways, when Linley and I developed this recipe a few months ago we thought we would be right on point with crock-pot season. In Minnesota there’s like a 50% chance there’s still snow on the ground in May, so crock-pot season lasts almost half the year. Point proven by the notification I just got on my phone: WINTER STORM WARNING FOR HENNEPIN COUNTY FROM THURSDAY MORNING UNTIL FRIDAY NIGHT.
Welcome back to Day 3 of Oatmeal Week! I feel like the oatmeal community unites together on this very week from all around the world. People get so jazzed for this week and I can totally see why. Oatmeal is the best food ever created. 😀 Today’s recipe is a spin off of one of my favorite Girl Scout Cookies – Samoas!
Speaking of the Girl Scouts. I was totally in GS in grade school. Actually, I vividly remember on a Girl Scout trip one summer that I learned how to make scrambled eggs. It was the coolest thing I ever experienced. 😀 It might sound lame to you, but I’ve always had a love for cooking so when I learned how simple it was to make scrambled eggs, I started making breakfast for the entire family. I also credit the Girl Scouts for helping me fall in love with entrepreneurialism. I remember being a 8 year old going door to door selling my favorite cookies. It was always a race to get to all of my neighbors before the other girls on my street did. BACK OFF GIRLS, I WAS HERE FIRST :O
So this very recipe is dedicated to the Girl Scouts. It’s a big thank you for teaching me how to make the perfect scrambie and how to sell stuff.
This oatmeal is the most decadent oatmeal recipe out of this week’s line up. While there is a higher caloric value in this recipe, it’s still made with healthful ingredients! The base is made from Better Oat’s Instant Steel Cut Oatmeal, which actually includes flax seed. This gives it a fantastic, chewy texture. You let the steel cut oats slow cook with a can of full-fat coconut milk (full-fat is key!) as well as cartoned coconut milk and a hint of maple. Once it’s done you stir in some flaked coconut and top it with homemade date caramel and a drizzle of chocolate.
It you’ve never made homemade date caramel, now is the time! All you have to do is food process dates and a little bit of water. The softer the dates, the better! It tastes like caramel heaven, but it’s made with 100% natural sugars. WINNING.
I wanted to make a note about instant steel cut oatmeal vs. normal. You need LESS liquid for instant. If you’re using regular steel cut oatmeal, I suggest adding about 2 more cups of cartoned coconut milk because that stuff really expands!
- 1.5 cups Better Oats Steel Cut Oats* (6 pouches)
- 1 can full-fat coconut milk
- ¼ cup maple syrup
- 3 cups unsweetened cartoned coconut milk, unsweetened
- ½ cup unsweetened shredded coconut
- ½ cup dark chocolate chips, melted
- ½ cup date caramel (10 dates + ¼ cup water)
- Place all ingredients (except for shredded coconut) into a slow cooker and cook on high for 2 hours or on low for 6-8. Stir every once in a while.
- When oatmeal is to your preferred consistency, stir in shredded coconut.
- Place in a bowl and to top with melted chocolate and date caramel.* Option to serve with a splash of unsweetened coconut milk.

-To lower the calories and fat contents, use lite coconut milk instead of full-fat.
