Homemade Baked Banana Oatmeal Bars
1C rolled oats
1/3C unsweetened coconut
1/3C almond meal (or any kind of chopped/ground nut)
1/3C millet flour (or any kind of whole grain flour)
1/2t baking soda
3T chia seeds
2 ripe bananas
1/4C maple syrup (you can add another 1/4 or so if you like yours sweeter)
1/4C almond milk
1/3C dried cranberries
1. Preheat oven to 350F and grease an 8 inch square pan with non stick cooking spray
2. In a medium sized bowl mash bananas until liquid. You may have a few lumps, this is okay! Then add your almond milk and maple syrup. Set aside.
3. In a large bowl, mix together the rest of ingredients (all you should have left are dry ingredients). Then, combine the wet with the dry together.
4. Evenly spread mixture onto your pan and bake at 350F for 30-35. Let cool for at least 15 minutes before cutting and serving.
