Nothing like waking up before 6AM on a Sunday morning. I just can’t sleep. All I’ve been thinking about is balls and the future of Fit Foodie Finds! I was hoping to have some sort of business planned worked out this weekend, but I don’t want to rush things. I want to give my mind a little bit of time to settle in with this whole Shark Tank thing!
In my early awakening yesterday, I decided to create a new ball recipe, of course.
I call them Coconut Chocolate Energy Balls. Can you guess what’s in them? This recipe makes about 10-11 balls, definitely 10 if you’re like me and have to test the batter 🙂
You can’t go wrong by adding more chocolate to something that’s already made with chocolate 🙂
I’ve been doing much better when it comes to eating the balls I make in moderation. Sometimes it’s hard to “just have one,” but I have been working hard on my intuitive eating. One ball is around 100 calories and that’s for me, it’s the perfect after lunch or dinner treat!

- Using a small food processor, process oats for about 20 seconds or until it turns into oat flour. Then, add in cocoa powder and coconut flakes and pulse a few times.
- Next, add in rest of ingredients and process until everything is mixed. If it looks like your dough is a little too dry, add a few tablespoons of water. That should do the trick!
- Last, using a small cookie scoop, form dough into balls. Then, heat dark chocolate chips for 45 seconds and stir. Transfer melted chocolate into a plastic bag and cut the tip off the back. Drizzle chocolate over balls. Garnish with dried coconut shavings.
