what you need:

Sweet potato Bell pepper Chili seasoning Beans Diced tomatoes Apple cider vinegar Maple syrup

Cook Veggies

Heat a large pot or Dutch oven over medium/high heat and cook sweet potato, bell peppers, onion, and garlic in olive oil.

Simmer

Add the rest of the ingredients into the pot and mix. Let simmer over low heat for 20 minutes.

Serve

Once the sweet potatoes are fork-tender, serve vegetarian chili with your favorite toppings such as shredded cheese and green onions.
