Idaho potatoes
eggs
nonfat plain Greek yogurt
mayo
minced fresh dill
dijon mustard
dill pickles
salt & pepper
Potatoes, greek yogurt, eggs and seasonings make a perfect potato salad!
Mix
Place potatoes on top of rack in instant pot. Place 2 eggs on top of potatoes. Mix vinegar & water together. Pour 3/4 cup of the liquid into the instant pot.

Cover
Cover Instant Pot & set to manual high pressure for 8 minutes. Place other ingredients in bowl, mix & place in refrigerator. Quick release pressure when done.

Peel
Place eggs in ice bath & potatoes in refrigerator. Peel, rough chop eggs & place in greek yogurt mixture.

Serve
Add potatoes to the Greek yogurt mixture and mix until combined. Use a spatula to mash potatoes. Top with fresh dill & enjoy!
