portobello mushrooms
olive oil
coarse salt & pepper
yellow onion
garlic
raw walnuts
cherry tomatoes
plain goat cheese
pesto
Preheat
Preheat oven to 400 & season mushrooms. Bake for 12-15 minutes or until they begin to soften and release moisture. Remove and let rest.

Sauté
Add onion to heated skillet & sauté for 2-3 minutes. Add garlic. Sauté for an additional minute. Add walnuts along with salt, pepper, paprika, and thyme.

Toss
Toss until coated in spices. Cook over medium heat until they begin to brown. Add cherry tomatoes. Sauté for 2-3 minutes.

Serve
Turn oven to broil. Fill mushrooms. Add goat cheese to top & place in oven for 2-3 min. Remove and drizzle each mushroom with pesto!
