chicken thighs

Prepare
Prepare seasonings & season chicken thighs. Let sit for 10 min. Heat olive oil in a pan. Add chicken, skin side down. Brown for 4 min. on each side. Flip. Add butter & broth.

Cook
Cover & cook chicken for 5 min. Remove chicken & deglaze skillet with red wine. Saute onions, then add mushrooms & salt for 4 min. Add garlic & cherry tomatoes.

Boil
Cook until tomatoes burst. Add remaining sauce ingredients & bring to a gentle boil. Add papparedelle & chicken and cover. Turn heat to low & cook for 15 min.

Serve
Add heavy cream. Cook another 5 min. When pasta is cooked remove skillet and let rest. Top the pasta with shaved parmesan. Serve!
