Split Pea Soup with Ham

what you need:

ham onion diced carrots diced celery shiitake mushrooms garlic dried split peas vegetable broth dijon mustard fresh thyme fresh sage

Saute

Add oil and saute onion in a large stock pot. Add remaining oil & vegetables. Saute for 4 min. Add garlic and saute another 2 min.

Add

Add split peas, broth, water, mustard, and salt & stir until combined. Tie the thyme and sage together & submerge it in the broth. Add hom bone & bring to a boil.

Simmer

Cover pot and turn heat to low. Let simmer for 1 hour, stirring periodically. Remove the hambone  & add diced ham. Let simmer for 15 minutes to heat the ham.

Serve

Remove herb bundle from the soup and remove from heat. Let sit for 15 minutes, uncovered to thicken before serving. Serve alone or with warm bread.
