Butterscotch Cookies

what you need:

unsalted butter light brown sugar maple syrup egg creamy almond butter vanilla extract salt quick-cooking oats baking soda butterscotch chips flakey sea salt

Prepare

Preheat oven to 350ºF and prepare a baking sheet. Place butter in saucepan. Turn heat off when butter begins to caramelize. Let sit until browned.

Combine

Combine brown sugar & butter in a stand mixer. Add maple syrup, egg, almond butter, & vanilla. Mix again. Add salt, oats, baking soda. Mix. Add butterscotch.

Refrigerate

Refrigerate dough for 20 min. Place dough balls onto cookie sheet and slightly press down to form a cookie shape. Repeat process until you’ve fit 6 cookies on baking sheet.

Cool

Bake cookies at 350ºF for 9-11 min. Remove cookies and let cool for a couple of minutes on the baking sheet before transferring them to a wire rack to cool completely.
