Happy Sunday friends. I don’t normally post on weekends, but HI HI! Here I am! The past week in Minnesota has been absolutely glorious. Somehow, summer has been sticking around and our weather has been in the low 70’s/upper 60’s. If you live in the midwest, you know that this time of year can be hit or miss. I checked out my Timehop the other day and a few years ago I had posted about SNOW and parkas. WOH.
Part of me is excited about winter because I just signed up for the Kortelopet, a 24k nordic ski race that I’m doing with my sister in February. I have been cc-skiing since I was like 12, but I have never actually done a race of any kind. Sister did the Korte last year and inspired me to sign up this year. This race is part of the infamous American Birkebeiner 55k race, America’s largest cross-country ski marathon. Maybe I’ll hit that one up in a couple of years 😛
So these smoothie bowls. They’re legit times 52. I’ve got a major thing for Apple Pie and Apple Crisp. Like, such a thing that I make it year round. It’s like pumpkin, it’s dubbed a fall thing and that’s just NOT OKAY.
These smoothie bowls are made with all the classic flavors.
- Apple (DUH)
- Oatmeal
/Crumble
- Cinnamon
- GREENS (optional)
That’s right. You can turn this Apple Pie Smoothie Bowl into a GREEN Apple Pie Smoothie Bowl in a matter of seconds. Just add spinach or kale and you’ve got yourself some color.
I went a little cray with my toppings. I mean, isn’t that the point with a smoothie bowl? To add as much shit as possible to the top. Oops, I swore. My girl Nicole from Blissful Eats sent me a GIANT package of granola early last week. One of the flavors is Apple Cinnamon Harvest, so naturally that’s what I topped this bad boy with. The cool thing about this granola is that it’s both vegan and paleo. I know how much of a struggle it is for my paleo friends to NOT EAT granola. Well, problems solved amigos.

Apple Pie Smoothie Bowl
- Yield: 1
Ingredients
- 1 frozen banana, small
- 1/2 cup non-fat vanilla Greek yogurt*
- 2/3 cup apple sauce, unsweetened
- 1/4 cup rolled oats**
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup almond milk, unsweetened
- optional: handful of fresh spinach or kale
Instructions
- Place all ingredients in a high-speed blender. Blend until smooth.
- Serve with lots of fixings on top!
Notes
*To make paleo/vegan, omit greek yogurt and add more almond milk!
** To make paleo, omit!

I made a little note in there that if you’d like to keep things vegan or paleo just omit the Greek yogurt and add a bit more almond milk. The reason I added Greek yogurt to this recipe was to 1. make things creamier and 2. simulate ice cream 😛 Yup, apple pie ain’t no apple pie without ice cream.

Nope, never been cc-skiing, but it sounds better (and less dangerous) than mountain skiing, and it will be double the fun since you’ll be doing it with your sis! 😉

Smoothie bowls, they are great, I usually have them in the summer, because it’s like I’m having ice cream for breakfast. I have to try to have them in colder months as well, this apple pie version sounds delicious.
