Apple Quinoa Salad

I am not extremely pleased with my attempt at photographing this dish. Nonetheless…it still turned out delicious!

This quinoa salad is a great side dish or even for breakfast! I served it cold, but I am interested to see how it would taste warm! (<--With melted brown sugar..MM)

Apple Quinoa Salad
  • 1 C Dry Organic Quinoa
  • 1 3/4 C water
  • 4 oz unsweetened apple sauce (snack size)
  • 1 t cinnamon 
  • 1/3 C Chopped Walnuts
  • 1/2 C Dried Cranberries 
  • 2-3 Medium Apples (sweet)
  • 1 T finely chopped Mint
  • 1 Lime 
  • 1 T honey
*Serves 8-10
  • Soak and rinse quinoa for 15 minutes
  • Bring 1 C quinoa, 1 3/4 C water, cinnamon, and 4 oz apple sauce (or 1/2 C apple juice) to a rolling boil
  • Let quinoa simmer for an additional 15 minutes or until water is gone
  • Chill quinoa in the refrigerator for at least an hour
  • Chop 1/3 C of walnuts
  • Cube 2-3 medium apples. Squeeze 1 lime (or lemon) over the apples and drizzle with honey.
  • Finely mince 1 T fresh Mint
  • Mix cranberries, walnuts, apples, and mint with the quinoa. Fluff together with a fork
^^Look at that amazing texture of the quinoa. So nutty and flavorful! If you haven’t tried it before, I highly recommend it! It is a little bit on the pricey side if you buy it commercially packed (Bob’s Red Mill), but I buy it in bulk so I can control how much I purchase (Roughly 1 C was a little over a dollar). Not bad. 
Time for more studying. Thursday can’t come soon enough. GOBBLE GOBBLE. :)
