Applesauce Skillet Pancake Cake

This scrumptious applesauce skillet pancake cake has all of your favorite things about the classic pancake, minus that darn pancake flip. Aside from being easy to make, this recipe gives you a satisfying and healthy breakfast to start off your day!

Ingredients

  • 1 cup white whole wheat flour
  • ½ cup rolled oatmeal
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • ½ cup applesauce
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon of honey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ºF and prepare a 10 inch cast iron pan by spraying with cooking oil.
  2. Place all dry ingredients in a medium bowl. Mix well and set aside.
  3. In a separate bowl, beat eggs well and then add the rest of the wet ingredients into the bowl. Mix well.
  4. Slowly add dry ingredients to wet ingredients until everything is well combined. Pour batter into the cast iron pan.
  5. Bake at 350ºF for 16-18 minutes*.

Notes

*Bake time depends on your oven and cast iron pan. Your cake with also continue to cook in your cast iron pan, so be aware of cook time!
