- 4 bacon-wrapped chicken breasts
- 3 hard-boiled eggs, halved
- 3 romaine hearts, chopped
- 2 cups cherry tomatoes, halved
- 1/4 red onion, minced
- 2 cups cucumber, sliced in half-moons
- 1/3 cup slivered almonds
- 1 large avocado, chunked
- 1/2 cup homemade ranch dressing or Greek yogurt blue cheese dressing
Instructions
- First, prepare your bacon-wrapped chicken breasts by following the instructions HERE.
- Next, prepare your hard-boiled eggs by following the instructions HERE.
- Chop 2 romaine hearts and place them into a large bowl. Add the tomatoes, red onion, cucumber, slivered almonds, and avocado and toss to combine everything.
- Separate salad out equally into 4 bowls and add a sliced bacon-wrapped chicken breast and half a hard-boiled egg. Top each salad with around 2 tablespoons of dressing.
