bread. hummus. egg.

Is anyone else a little shaken up by yesterday’s Boston Marathon event? I know I am. Just seeing all of the distressed posts on facebook and Twitter gives me the heebeegeebies. Many of my blog friends were either running in the marathon or spectating and thankfully all of them are safe and sound (I am sending positive energy your way!). When shit (for lack of a better word) like this happens it really makes me rethink life and what our purpose as humans is. We should not be meant to harm, rather to embrace the world and live happy. love. be. I could go on an on and dig really deep, but we will save that for another conversation. I don’t even know if it is appropriate to post a “normal post,” but eggs make everyone happier.

This is a very simple recipe. It doesn’t require any mad skill or use a ton of brain cells- just a few ingredients and a toaster.


Only three ingredients.


You need a piece of whole grain bread (toasted), a fried egg, and your favorite hummus or spread!


Mix them all together and you get eggy (healthy) goodness! I was at Target the other day (when am I not at Target) and I picked up some Pepperidge Farms Ancient Grains Bread. I give it a 3 thumbs up. Not gluten free, but packed with yummy grains. I do have to say…this was my first time having the Athenos brand of hummus and it wasn’t AH.MAY.ZING. I’m definitely going back to Sabra once I run out.


As for the egg, I of course used Kansas Farm Fresh straight from Blake’s dad’s house. It’s  nice having an endless supply on hand :) These eggs have a very yellow yoke, if that makes any sense. I can tell when I am baking because things are a bit more yellow than the normal eggs I get from Target or the grocery store.

Again, my thoughts are with Boston today and for a long long while! The way I cope with tragic events, is to try and carry on with normalcy in my daily life. Keep your head up today!
