Caveman Chocolate Cupcakes

Ingredients

  • 2 and 1/4 cups almond meal (I use the Trader Joe’s Brand)
  • 1/2 cup coconut palm sugar
  • 1 and 1/2 teaspoons baking powder
  • 1/2 cup cocoa powder
  • 1/2 cup egg whites
  • 1/2 cup apple sauce
  • 1/2 cup unsweetened almond milk

Instructions

  1. First, preheat oven to 350F and line a cupcake tin with cupcake liners. Then spray with coconut oil spray. Set aside.
  2. In a large bowl, mix together dry ingredients. Then add in wet ingredients and mix until combined.
  3. spoon batter into cupcake tin, filling about 3/4 of the way.
  4. Bake at 350 for 23-25 minutes or until the cupcakes pass the toothpick test.
