Must. Drink. Coffee.
I know I’m not the only one who craves coffee…right?
I wake up. and I make my coffee. I genuinely like the taste of it (minus the fact that it stains your teeth) and only started drinking it about a year ago. I found that it kept my body warm during my harsh walks to class, so I began brewing a batch for the roommates and myself in the AM.
Little did I know…my body likes a little more than just the taste of coffee. CAFFEINE.
So, this morning’s breakfast (sin cafe) was the usual minus the Peanut Butter [plus] the [Cashew/Almond Butter]. PB is one of the foods to avoid for week one of the 28-Day Challenge. No problemo, I supplement for different kind (In Italian Accent).
After my workout [38 minutes of interval cardio on the treadmill + abs] I had a nice, juicy apple and some raisins!
My dad and I made plans to get lunch with my Nonnie, so we hopped in the car and drove to Chicago. It only took us a little over an hour to get to the northern suburbs. No biggie! We grabbed Corner Bakery for lunch. This was my first time eating here…and I was pleasantly surprised at how similar their food was compared to Panera.
Harvest Salad– mixed greens, chicken, currents, pears, and balsamic vinegar.

We ended up waiting a little over 10 minutes before the manager noticed we hadn’t gotten our food. He came to our and apologized (even though we really didn’t mind) and gave us a 20 dollar gift card! free food. YES PLEASE.
Considering we were at a cafe, I was tortured with coffee. I was THIS CLOSE to getting decaf but I stayed strong!
For some reason, lunch didn’t fill me up. When we got back to Milwaukee, I sliced a pear and sprinkled some cinnamon on top and made a cup of Lemon Ginger Tea.
Hit the spot
My mom was gifted Carob Powder this Christmas by one of her college roommates who has lots of different food allergies and sensitivities. Carob powder comes from the pod of a Mediterranean tree and is often used as a cocoa substitute because it naturally sweeter than chocolate plus other benefits.
1T of unsweetened carob powder has 20 calories, no fat, no saturated fat, no cholesterol, and 5 grams of carbohydrates [compared to 1T unsweetened cocoa powder which has 12 calories 1 gram of fat, no saturated fat, no cholesterol, and 3 grams of carbohydrates.] Carob powder is also high in fiber and has no caffeine! Carob Cashew Nut Butter
-1.5 C toasted, unsalted cashews
-1T carob powder
-pinch of salt
Directions: Mix all ingredients in a small food processor and process for 5-8 minutes until your nuts become smooth and creamy! You will have to stop and scrape the sides a few times.

Dinner tonight was simple. Left over Spanish Paella over a bed of black beans. I think I could eat paella every single day. Perfect blend of spices, meats, and veggies. Que delicioso!
28-Day Challenge: [week 1 – day 1]
*Ditch Common Allergens: Added sugars in foods and beverages, caffeine, wheat, dairy, peanuts, soy, and corn.
This was difficult for me today! I am sort of obsessed with drinking 0-Calorie Vitamin Waters and La Croix [AND COFFEE], so I opted for lemon water and tea today. Eggs and yogurt are also a staple in my diet so this was another difficulty for me! Even though I love PB, I counteracted this craving for my homemade nut butters —>Maple Almond Butter and Cinnamon Cashew Butter.

I am one of those people who scarfs their food. Today, I made sure to slow down and focus on intuitive eating!
I am not going to lie, I watched Live with Regis and Kelly this morning while I was on the treadmill. Other than that, no blog surfing or TV watching!
