Fajita Stir Fry Wrap

Haha, just kidding! I obviously had to think of something creative to make with all of the vegetables I got from the Farmer’s Market this week. Because I couldn’t decide on one  single vegetable to prepare, I decided to sauté a bunch together with a fajita inspiration and then wrap it up in a piece of Chinese Spinach! It’s like a Chipotle Burrito, without the tortilla, and meat, and rice…

Fajita Stir Fry Wrap
Ingredients
-onions
-zucchini
-red bell pepper
-asparagus
-garlic
-pepper
-tomatoes
-olive oil
-Fajita Spices- I use Penzey’s

Method
This is a lot simpler to make than it looks! Begin by chopping your veggies into bite sized pieces. You can chop your vegetables smaller if you’d like, but I like mine big and chunky! Then, heat ~1/2T garlic in ~1T olive oil in a medium sized skillet. Next saute your veggies. Finally, add in your spices and ~1/4C water. Serve on top of quinoa or brown rice  (I used quinoa). If you’re really feeling creative, you can make a mock burrito and wrap it in a big leaf piece of chinese spinach.

Next time I am definitely going to throw in some black beans and top it with some avocado and salsa! Have I mentioned that I put salsa on EVERYTHING. That and hummus. Salsa and hummus together is like heaven in my mouth!

Anyways, I am pretty excited that I made enough Fajita Stir Fry to feed a small army of 10 year old boys because I LOVE LEFTOVERS. Kind of quirky- but I thoroughly enjoy my leftovers cold; especially vegetables and quinoa. Don’t judge.
