Healthy Chocolate Chip Cookie Bites

I have always considered myself more of a “Cooker” than a “Baker.” I’ve definitely transformed into a Caker? What I’m trying to say is that I think I should quit my day job and become a Professional Healthy Children’s Baker/Chef. Oh wait…I don’t have a real job yet.
Remember when I made Healthified Chocolate Chip Cookies? I decided to alter the recipe just a tad and really make these guys 100% wholesome. Grind me some oats, nix me some white flour.
I would like to introduce you to: oat flour.
Oat flour is simple to make and acts just like any other flour, plus is GF! All you need is rolled oats and a coffee bean grinder. In less than a minute, you have oat flour!
Healthy Chocolate Chip Cookie Bites
-3/4 cup oat flour
-2/3 cup whole wheat flour
-1/3 cup flax seed meal
-1/2t baking soda
-1/2t salt
-1/4 cup vegetable oil
-1/4 cup butter, softened
-1/3 cup granulated sugar
-1/3 cup brown sugar
-1 large egg
-1t vanilla extract
-2/3C semi-sweet chocolate chips

1. Preheat oven to 350F and grease 2 cookie sheets with non-stick cooking spray
2. Using a coffee grinder, grind 3/4 cups of rolled oats until it becomes fine like flour.

2. In a large bowl, mix together dry ingredients. In a small bowl, mix together wet ingredients. Then, pour wet ingredients into dry ingredients and stir.
3. Using a cookie scoop [an ice cream scoop worked quite well], form small balls and evenly space onto greased the cookie sheet.
4. Bake for 10-13 minutes or until the cookies begin to brown.
Operation- success. 
I’m surprised I got that many cookies (16?) out of this batch. I could barley keep my kids paws out of the dough. “But Lee, I promise I won’t get sick!”
Yes, that is a shoe lace ^^. I thought it created movement :)
I almost lost my cookies. No no, they didn’t make me throw up. They blended right into the counter top!
Okay, time to paper mache. What am I getting myself into? Only 2 more days left of summer/nannying we gots to live it up!
