Homemade Apple Cinnamon Granola

  • 2 cups rolled oats
  • 3/4 cup chopped walnuts
  • 1/2 cup pepitas
  • 2 tablespoons melted coconut oil
  • 3 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • pinch of salt
  • 1.5 cups chopped dried apples
  • 1/2 cup unsweetened dried cranberries


  1. Preheat oven to 350ºF and spray a baking sheet with coconut oil cooking spray or lay a piece of parchment paper down over the baking sheet.
  2. Place rolled oats, walnuts, and pepitas onto the baking sheet and toss with your hands or a wooden spoon.
  3. Then, drizzle on maple syrup and melted coconut oil and toss again with a wooden spoon.
  4. Finally, season granola with cinnamon, nutmeg, ginger, and salt and toss one more time.
  5. Place in the oven at 350ºF for 10 minutes. Remove and toss. Place back in for another 10-15 minutes.
  6. Remove granola from the oven and let cool for 5 minutes. Add dried apples and cranberries and toss.
