Homemade Baked Banana Oatmeal Bars

Granola bars + baked oatmeal = genius.My attempt at making a healthified version of a Chewy Bar pretty much failed. You win some, you lose some. I took this as an opportunity to “learn from my mistakes.” …more like “eat” my mistakes. These bars turned out way better than expected!


 
Homemade Baked Banana Oatmeal Bars

Ingredients
1C rolled oats
1/3C unsweetened coconut
1/3C almond meal (or any kind of chopped/ground nut)
1/3C millet flour (or any kind of whole grain flour)
1/2t baking soda
3T chia seeds
1/2t cinnamon
2 ripe bananas
1/4C maple syrup (you can add another 1/4 or so if you like yours sweeter)
1/4C almond milk
1/3C dried cranberries

Method
1. Preheat oven to 350F and grease an 8 inch square pan with non stick cooking spray
2. In a medium sized bowl mash bananas until liquid. You may have a few lumps, this is okay! Then add your almond milk and maple syrup. Set aside.
3. In a large bowl, mix together the rest of ingredients (all you should have left are dry ingredients). Then, combine the wet with the dry together.
4. Evenly spread mixture onto your pan and bake at 350F for 30-35. Let cool for at least 15 minutes before cutting and serving.

 
 
 
Look at those Chia-Chia-Chia Seeds! These bars were delicious; not to sweet and cakey. If you desire, you can double the amount of maple syrup or even add some brown sugar to sweeten them up a little bit. I topped mine with some peanut butter, so it really didn’t need to be any sweeter :)
 
Speaking of Chia Seeds, I have been a little obsessed with them lately. I actually just ordered 3 lbs. off of Amazon.com for $15.00. The brand is called Alive and Aware Natural Health, here is the LINK. You can also find chia seeds at Whole Foods, local specialty stores, and co-ops. I have found that they are a lot more expensive if you get them in stores compared to the Internet. At WF they were $15.00 for a single pound, where as I got 3 pounds for that price!  
 
You might as well get 3 lbs when you eat them on everything :)
 
Fresh strawberries with peanut flour sauce & chia seeds
 
My staple dessert lately has been some sort of fresh fruit with peanut flour sauce and chia seeds! SO GOOD and such a great way to satisfy my sweet tooth after dinner!
