Instant Pot Vegan Pad Thai

The Instant Pot is fairly new to most of us. Yes, it is a new age pressure cooker, but there are new frills and settings with every Instant Pot that can be a bit confusing if you’ve never used an Instant Pot before. Here on Fit Foodie Finds we’re always striving to share healthy recipes that are accessible and easy. Our goal when using the Instant Pot remained the same. So, we rolled up our sleeves and got recipe testing!

We love using the Instant Pot to cut time off making a recipe, so we generally try to use the manual pressure setting along with a quick release.

After much trial and error, we’re THRILLED with how this Instant Pot Vegan Pad Thai turned out! It’s absolutely delicious, but that wasn’t before testing it a million times. We wanted to share some insights, tips and tricks with all of you regarding our testing process with this recipe. You will find a step-by-step guide to this healthy Pad thai recipe below!

Step 1: Prepare Vegetables for Vegan Pad Thai

What veggies you use really does matter for this recipe. All vegetables have different density and water content, and we found that sturdier veggies held up better. Broccoli was completely overcooked, so we’d suggest carrots, pea pods and peppers if they’re available to you. Feel free to test your favorite veggies knowing that you may have to adjust your cook time!

Step 2: Homemade Pad Thai Sauce

Pad Thai sauce is very easy to make! Here’s what you’ll need:

Feel free to use your favorite soy sauce, but know have options here! You can use tamari, low-sodium soy sauce, or aminos.

Step 3: Cook Pad Thai Noodles

Rice noodles–> The thickness does matter. Thicker rice noodles are better for this recipe because they don’t turn into a mushy mess in the Instant Pot. Don’t forget to constantly stir your rice noodles during the boiling process of this recipe. We found that if you just throw the noodles in the broth without stirring, they became clumpy and did not cook all the way through.

Step 4: Add Vegetables to Instant Pot

Immediately after boiling the noodles, turn off your Instant Pot, give noodles one last stir, and then set your vegetables on top of the rice noodle mixture rather than mixing it all together before cooking it in the Instant Pot. This will help you avoid mushy vegetables. Turn Instant Pot on and cook on manual high pressure for one minute. Quick release, and give your Pad Thai a stir.

Step 5: Pad Thai Toppings

Toppings are the best part of this recipe! If you are good to go with just the Pad Thai sauce, go for it! But we like to add chopped peanuts, cilantro, and a squeeze of lime to the top of our Pad Thai. There is just nothing better!

Instant Pot Vegan Pad Thai

Pad Thai Sauce

  • 1/3 cup low sodium soy sauce (or tamari)
  • 1/2 tablespoon finely minced ginger, fresh
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon maple syrup
  • 2 teaspoon sriracha
  • 1.5 cups water
  • 1/2 cup vegetable broth
  • 2 teaspoon apple cider vinegar


  • 8 oz. stir-fry rice noodles (we used Thai Kitchen)
  • 2 cups fresh pea pods
  • 4 medium carrots, sliced into matchsticks
  • 2 large red peppers, sliced
  • 1/2 large red onion, sliced

Optional Toppings

  • Cilantro
  • Peanuts
  • Lime juice


  1. Place all pad Thai sauce ingredients into the Instant Pot. Turn on the saute function and bring sauce to a boil.
  2. Add stir-fry noodles into the sauce. Boil noodles for 2 minutes, stirring frequently. Turn off Instant Pot.
  3. Stir noodles one last time and then place all vegetables on top of noodles. Cover Instant Pot and turn pressure valve to seal. Press manual and cook on high for 1 minute.
  4. Quick release pressure and remove the top. Carefully mix noodles with vegetables and top with optional cilantro, peanuts, and fresh lime juice.


  • If you substitute any of these vegetables for something else, the cook time may vary.
  • We only tested this recipe with Thai Kitchen Stir-Rice Noodles and not any other brand. If you use a different product, boil time may differ.
