  • 1 cup uncooked quinoa
  • 1 15-oz. can full-fat coconut milk
  • 1/2 cup water
  • 1 tablespoon maple syrup (or more, to taste)


  1. Place all ingredients in a medium size pot.
  2. Bring to a rolling boil over medium/high heat.
  3. Once boiling, reduce heat to low, cover, and let simmer for around 20 minutes or until the liquid has absorbed and the quinoa has fully cooked.
