My Favorite Breakfast: Overnight Oats

The day I saw Kath use an almost empty jar of nut-butter for her overnight oats was life changing. I’ve been a fan ever since :)Really though, it is the perfect on-the-go breakfast that you can make the night before and have ready in the AM. This morning’s nut butter of choice was actually a seed butter….Sunflower Seed Butter. I picked up this jar at a local co-op (Seward Co-Op) for around $6.00 (a little pricey in my opinion).

Never tried sunflower seed butter? You should. It is a great peanut free option and actually VERY tasty. I liked this brand a lot and would definitely buy it again.

 
Overnight Oats in a Jar
Ingredients
-1 jar of almost empty nut/seed butter
-1/3 cup oatmeal
-2/3 cup liquid (milk of choice or water…today I used water)
-1/3 – 1/2 scoop of Designer Whey Vanilla Protein Powder
-1/2 tablespoon chia seeds
-Toppings: fresh berries and sliced banana


Method
-Mix all ingredients together in a small bowl and then transfer to your almost-empty nut/seed butter jar. Let sit overnight in the fridge. EAT.
