Peanut Butter Cup Granola

This granola recipe is a peanut butter cup in granola form! Crunchy, peanut-y and oh so delicious. Top your smoothie or yogurt with this peanut butter cup granola for the best breakfast ever.

  • 1/4 cup all-natural peanut butter
  • 1/4 cup honey (option to sub maple syrup)
  • 2 tablespoons coconut oil, partially melted
  • 1 teaspoon vanilla extract


  • 3 cups rolled oats
  • 1 cup unsalted peanuts
  • 1/8 teaspoon sea salt
  • 1/2 cup dark chocolate chips (or dairy-free)


  1. First, preheat oven to 350ºF and line a baking sheet with parchment paper.
  2. Next, melt coconut oil and place in a medium-size bowl. Then, add in peanut butter, honey, and vanilla and mix until smooth.
  3. Add rolled oats, peanuts, and salt and mix until everything is combined. Your mixture should be wet, but not cookie dough wet! So, if you need to add more oats, do so here!
  4. Place mixture on baking sheet and spread out as evenly as possible.
  5. Bake at 350ºF for 12 minutes. Remove baking sheet and toss granola. Then place back in oven and bake for an additional 10 minutes or until golden brown.
  6. Remove and let cool for at leave 30 minutes before adding in the chocolate chips.


Storage: store in an air-tight container for up to 2 weeks.
