This Pumpkin Pie Slow Cooker Oatmeal is creamy as can be and full of flavor. It’s made with steel cut oats, pumpkin puree, pumpkin spice, and a hint of maple.
The last day of Oatmeal Week is always the saddest day of the year 🙁 🙁 I love love love how much you guys love oatmeal. It is one of the main reasons why I started blogging in the first place — to share my love for oats. I remember as a kid I thought oatmeal was disgusting. Why would I ever want to eat that for breakfast? Well, my 8 year old self clearly didn’t know what was up! Once college hit, I had to find cheap, healthy ways to get some nutrition in before class and that’s when it all happened for me.
Today’s delicious oatmeal recipe is a fall-inspired flavor — Pumpkin Pie! It’s made by slow cooking Better Oats’ Quick Cooking Steel Cut Oats with pumpkin puree (option to sub sweet potato), maple syrup, pumpkin pie spice, and almond milk. Just because we’re going into Spring, doesn’t mean that you can’t make this affordable, breakfast. I say affordable because all of these ingredients are staples and you can make this recipe in mass quantities AKA meal prep. The thing that I love about Better Oats’ Instant Steel Cut Oatmeal is that if you are in a pinch and can’t make this recipe, you can just microwave a packet in 2.5 minutes! On the stove top, regular steel cut takes like 40 minutes! #score
If you do meal prep this oatmeal, it should stay good for up to 4 days in the fridge. What I like to do is make a double batch of this in my slow cooker and then portion it out into seperate glass containers or jars. I stack em all up in my fridge until the day of. THEN I top with #allthetoppings.
Pumpkin Pie Slow Cooker Oatmeal
- Cashew Butter
- Place all ingredients in a crock pot, mix well.
- Cook on high for 2-4 hours.
- Top with pecans, cashew butter, and crasins.
