Repeat Recipe Monday: Overnight Oats

I have decided that I am going to start doing “repeat recipes” every Monday (or at least once a week). I have so many great recipes and some of them get lost in the dust. This way- it will let me bring some oldies back to life! 
I thought I would kick off Repeat Recipe Monday with a summer-inspired breakfast. I did this because I got a whiff of summer today. It was a heat wave here in Minneapolis…high of 33 degrees. The sun was also out, which has been pretty much absent all winter. 33 and sunny may not seem like summer you, but it sure feels like a breath of fresh air for us northerners :)
Overnight Oats is definitely in my top 3 favorite breakfasts. You make it at night and it’s all ready to go in the AM. If you use a mason jar, it’s easily portable! 

You can really add anything and everything to our overnight oats. In this recipe I added flax seeds and chia seeds for some more nutrients, but it is perfectly okay if you don’t use those.


Overnight Oats
-Servings: 2
Ingredients 
-2/3C rolled oatmeal
-1 and 1/3C of coconut milk
-1T chia seeds
-1T flax seeds
-1/2 mashed banana
-handful of chopped strawberries
-handful of blueberries
-1 scoop of Vanilla Whey Protein Powder (I use Designer Whey)

Method
Mix all ingredients together in a large mason jar and let sit in the fridge over night.

-vanilla
-cherries
-raisins 
-apples
-nuts
-maple syrup
-peanut butter
-honey
-jam
-greek yogurt
Really the list goes on and on. I can’t wait to start making OO again! Happy Monday Fit Foodies!
