Cheese cheese cheese, I love cheese.

There was a point in my life when I was really restrictive on the types of food I would allow myself to eat. Pretty much anything that was high in fat or sugar was off limits, which is why I didn’t eat any cheese for a good year of my life. Sad right?

Today, I look at cheese as a protein source and a NECESSITY in every salad.

One of my favorite parts about having Linley on Team Fit Foodie is her creativity when it comes to cooking! She helped me develop this little bowl of heaven. There’s no way I would have thought to use chopped dates.

Cha-ching. 

In this recipe I used baby kale…the kind that comes prepackaged in a plastic box. I find it’s less pungent tasting (reminds me more of spinach), but normal kale off the stalk works too, you may just have to massage the kale longer with the vinaigrette!

Spring Kale Salad

  • Prep Time: 10 minutes
  • Total Time: 10 minutes
Yield: 2-4 servings

Ingredients

For the Salad

  • 6 dates, pitted and quartered
  • 4 giant handfuls of kale
  • 1 orange, peeled and sliced
  • 1 apple, thinly sliced
  • 1/2 cup walnuts, chopped
  • 1/4 cup feta crumbles

For the Citrus Vinaigrette

Instructions

For the Citrus Vinaigrette

  1. Whisk all ingredients together in a small bowl, set aside.

For the Salad

  1. Place kale in a large bowl. Then, pour on dressing and massage into kale. Next, dress the salad with all of your add-ins. Enjoy!

Feel free to add in whatever citrus fruits float your fancy. If you don’t like feta, try gorgonzola or goat cheese. Not a date fan? Throw in some dried cranberries or even raisins.
