Spring Kale Salad

For the Salad

  • 6 dates, pitted and quartered
  • 4 giant handfuls of kale
  • 1 orange, peeled and sliced
  • 1 apple, thinly sliced
  • 1/2 cup walnuts, chopped
  • 1/4 cup feta crumbles

For the Citrus Vinaigrette

  1. Whisk all ingredients together in a small bowl, set aside.

For the Salad

  1. Place kale in a large bowl. Then, pour on dressing and massage into kale. Next, dress the salad with all of your add-ins. Enjoy!
