Strawberry Banana Buckwheat Bake

How could these not make you smile?

One day, I’m going to have a HUGE garden of my own :)

The sun was just gorgeous today and I had to take some snaps of the madre’s garden! SO BEAUTIFUL! I can’t wait until the veggies start coming in! There’s nothin’ better than eating home grown roasted zucchini and green bell peppers for dinner!

I sort of resemble a ghost in this photo.

All of the beautimous colors amongst the flowers inspired me to add some sparkle to a buckwheat bake. I introduce you to: Strawberry Banana Buckwheat Bake

Strawberry Banana Buckwheat Bake

Ingredients
-3T organic buckwheat flour
-1T oat bran
-1/2 banana, mashed
-4 large strawberries, diced
-1 large egg white
-1t vanilla
-1/4t cinnamon
-1/4t baking powder
-1T chia seeds
-3T almond milk
-1/2T agave nectar 

Method

1. Preheat oven to 350F

2. In a small bowl, mash banana until it becomes liquidy. Add in the egg white, vanilla, almond milk, and agave nectar. Then add your dry ingredients.

3. Next, poor entire mixture into a GREASED ramekin or muffin tin. You will want to fill whatever you choose to use about 3/4 of the way full. *Remember to grease your pan! This step is extremely important.

4. Bake for 30-35 minutes or until the top starts to turn golden brown.

So fluffy and delicious!

I topped my bake with nut butter and sliced banana. I got a little too excited and forgot to take a snapshot of the final product! #oopsWho else is excited for the weekend!?!
