We like to have everything we need for healthy pancake recipes at all times, because who the heck knows when we will get a sudden craving for some pancakes, some flapjacks, los panqueques, or some bite-sized silver dollars. Am I right?!
One thing we have really strived for at FFF HQ is to make the perfect pancake, no matter what healthy pancake recipes we use. We have determined that making sure your pan is not too hot (be patient) and you don’t want your batter to be too thin / watery. As long as those two things are at the front of your mind while mixing up your batter, you are in pretty good shape!
The last (and maybe most important) aspect of the perfect pancake are the TOPPINGS. The toppings I place a top my sweet tower of cakes totally depends on my mood. I love mixing sweet + savory, so a little greek yogurt and some nuts tend to be my go-to. However, you just can’t go wrong with peanut butter, maple syrup, or some hemp seeds.

Basic Healthy Pancake Recipe
In search of a go-to basic pancake recipe? Look no further! This healthy pancake recipe is delicious as-is, or spruce it up and add your favorite pureed fruit, nut butter, or even ground breakfast sausage. Bam! Breakfast dreams come true.
- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes
- 1.5 cups white whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/8 teaspoon salt
- 1 cup pureed fruit*
- 2 eggs, large
- 1 teaspoon vanilla
- 1 cup milk of choice
- 3 tablespoons coconut oil, melted
- First, spray a large nonstick pan with coconut oil cooking spray (or butter) and heat to medium heat.
- Next, mix together dry ingredients in a medium-size bowl and set aside.
- In a large bowl, whisk eggs together. Then, add vanilla and milk. Whisk until smooth.
- Slowly add dry ingredients to wet and mix.
- Finally, add in melted coconut oil and mix until smooth. If your batter feels too thin, add in a few tablespoons of flour and if it feels too thick, add in a few tablespoons of almond milk.
- Scoop a heaping 1/4 cup of the batter onto your pan and cook for 2-3 minutes on each side or until golden brown
*2 mashed bananas, sweet potato puree, applesauce, etc.
