Grilled Teriyaki Chicken

Foil Pack Peppers and Onions

  • 2 medium bell peppers
  • 1 medium yellow onion
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • salt and pepper, to taste


  1. First, prepare homemade teriyaki sauce, by following THIS recipe.
  2. Next, place 1 lb. of chicken breast into a gallon-size plastic bag or large stasher bag. Then, pour on teriyaki marinade and let sit in the fridge for 30-minutes to 2 hours.
  3. Preheat grill to 425ºF.
  4. Prepare foil pack peppers and onions by slicing your bell peppers and onion into large bite-sized pieces.
  5. Place veggies on a large piece of tin foil and then drizzle with olive oil. Sprinkle on minced garlic and season with salt and pepper. Toss.
  6. Place one more piece of til foil on top of veggies and then fold the sides together to create your foil pack.
  7. Place foil pack veggies and chicken breasts directly on the flame of your grill. Set the remaining teriyaki sauce aside.
  8. Grill chicken at 425ºF for 7-10 minutes on each side or until the chicken reaches 165ºF on the inside.
  9. When you remove your chicken, check your veggies. Cook until desired texture has been reached.
  10. To thicken remaining teriyaki sauce, pour sauce into a small saucepan and bring to a boil. Add 2 teaspoons of cornstarch and whisk until dissolved and the sauce has thickened.
  11. Serve chicken and veggies with your choice of grain and more sauce.
