Vegan Peanut Butter Chocolate Overnight Oats

Spring is here and it’s time to jump on the overnight oatmeal train! These vegan peanut butter cup overnight oats are easy to make, a time saver, and beyond scrumptious.

Ingredients

Peanut Butter Layer

  • 1 cup quick cooking oats
  • 1.25 cups Silk Unsweetened Vanilla Almondmilk
  • 2 teaspoons chia seeds
  • 1 tablespoon honey (or any kind of sweetener such as agave or maple syrup)
  • 2 teaspoons ground flax seed
  • 2 tablespoons all-natural peanut butter
  • pinch of salt

Chocolate Later

  • 1 cup quick cooking oats
  • 1.5 cups Silk Unsweetened Vanilla Almondmilk
  • 2 teaspoons chia seeds
  • 1 tablespoon maple syrup (or any kind of sweetener such as honey or agave)
  • 2 teaspoons ground flax seed
  • 3 tablespoons cocoa powder
  • pinch of salt

Optional toppings

  • all natural peanut butter
  • mini chocolate chips

Instructions

For the Peanut Butter Layer

  1. Place all ingredients into a glass tupperware and mix. Place in refrigerator for at least 2 hours or overnight.

For the Chocolate Layer

  1. Place all ingredients into a glass tupperware and mix. Place in refrigerator for at least 2 hours or overnight.

For the Peanut Butter Cup Overnight Oats

  1. In a jar (we used a 1/5 liter Weck jar), layer the peanut butter and chocolate overnight oat mixture. Top with all natural peanut butter and a few chocolate chips.
