Combine
Preheat oven to 350ºF and line a muffin tin with paper liners. Combine dry ingredients in a bowl and set aside. Prepare bananas foster topping according to recipe.

Cook
Heat butter & rum for the wet ingredients. When the butter has melted whisk the ingredients together. Cook bananas. Remove from heat and mash.

Whisk
Combine brown sugar & maple syrup. Add bananas. Whisk in eggs. Add the almond milk & combine. Add dry & wet ingredients. Mix in coconut oil.

Serve
Add batter to muffin tin & top with a banana. Bake for 18-22 min. Remove the muffins from the muffin tin and let them cool on a wire cooling rack.
