Preheat oven to 375ºF and prepare baking dish. Add rolled oats, flour, brown sugar, butter, and vanilla extract to a mixing bowl. Use a spoon to combine until crumble forms.

Mix
Mash 1 very ripe banana until liquidy. Add eggs, vanilla extract, honey, and oat milk and mix until smooth. Mix in rolled oats, flour, baking powder, salt, and blueberries.

Transfer
Transfer the batter to the baking dish and top with the streusel topping—cover and bake for about 30 minutes.

Serve
Remove the tin foil and bake for an additional 10 minutes or until firm. Let the oatmeal bake cool for about 10 minutes before serving.
