This butternut squash mac is the perfect weeknight meal or holiday side!

what you need:

Butternut squash Shredded cheese Vegetable broth Spices 2% milk Noodles

Roast Veggies

First, roast butternut squash, onion, and garlic in olive oil. Roast until the butternut squash is fork-tender.

Transfer Veggies

Transfer the roasted butternut squash, onion, and garlic into a high speed blender. Add broth.

Blend

Blend on high until everything has pureed.

Add Cheese

Add shredded cheese, pasta water, and milk and blend until the cheese has melted and a thick sauce has formed.

Mix

Place cooked noodles into a casserole dish and pour the butternut squash cheese sauce on top. Toss to combine.

Broil

Sprinkle breadcrumbs on top and broil on high for a few minutes until the breadcrumbs begin to brown.

Serve

Serve butternut squash mac and cheese immediately. Top with fresh sage.
