These carrot pancakes are gluten-free made from the base of oat flour and g/f flour.

Shred Carrots

First, use a cheese grater to shred a medium carrot. Then, remove excess moisture by squeezing the shredded carrot between paper towel.

Mix Batter

Combine wet ingredients. Then, add dry ingredients and mix to combine. Finally, add in melted coconut oil and mix again.

Cook Pancakes

Heat coconut oil or butter in a nonstick skillet. Cook medium-sized pancakes over medium heat for around 3 minutes per side.
