Chicken and Mushroom Pasta

This pasta is made up of a lighter cream sauce and is full of umami from the mushrooms!

what you need:

dried pasta  boneless chicken breast all-purpose flour garlic powder & fresh garlic dried thyme beef or chicken broth tomato paste dry white wine white onion  mushrooms sun dried tomatoes in oil heavy cream

Boil Pasta

First, bring salted water to a boil and add in your pasta. Once pasta is near al dente, set aside 1/2 cups of starchy pasta water.

Chicken

Next, prep your dry rub for your chicken, and coat the  chicken in the dry rub. Then, cook your chicken in olive oil until chicken reaches 165ºF.

Sauté

Next, deglaze the pan with the dry white wine and begin sautéing the onion and mushrooms. Add the garlic & beef broth to the mushrooms.

Combine

Next, add in the starchy pasta water and tomato paste. Then, add the sun dried tomatoes and the remaining salt to the pan and toss.

Cream 

Then, remove the skillet from heat and stir in the heavy cream. Next, add the chicken and pasta back to the skillet and combine.

Serve

Serve by topping with parmesan and fresh thyme. Enjoy!
