Saute
Partially cook sausage and remove from pan. Leave drippings & add onion. Stir periodically. Add olive oil & mushrooms. Saute for another 5 minutes.

Cook
Add garlic & spinach to the pan. Toss. Cook until garlic is fragrant and spinach is wilted. Remove from heat. Whisk the eggs, heavy cream, and milk in a large bowl until combined.

Refrigerate
Prepare a casserole dish. Add bread, vegetables, sausage, cheeses, & seasonings. Toss. Pour eggs over. Press ingredients down. Refrigerate overnight.

Bake
Preheat oven to 350. Toss strata. Cover & bake for 30 min. Uncover & bake another 30. Add remaining cheese. Bake another 10 min.
