This vegan pasta has the most delicious creamy tomato and garlic pasta sauce!

what you need:

Raw cashews Tomatoes Olive oil Garlic cloves Onion Salt and pepper

This is a cashew-based creamy vegan pasta sauce. We recommend raw cashews.

Soak Cashews

Place cashews into a jar or bowl. Then, top with water. Let soak for 12-24 hours or until soft.

Roast Veggies

Place tomatoes, onion, and garlic onto a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast at 400ºF for 20 minutes.

Peel Tomatoes

Carefully peel the skins off of the tomatoes (it will be hot!). Then, roast for 10 more minutes.

Blend Sauce

Place roasted veggies and soaked cashews into a high-speed blender. Add olive oil and salt. Blend until smooth.

Toss Pasta

Toss cooked pasta with the creamy vegan pasta sauce.

Serve & Enjoy!

Serve pasta with fresh basil and homemade vegan parmesan cheese. Enjoy.
