Dutch Oven Chicken Thighs

These Dutch Oven Chicken Thighs are made with Brussels sprouts and quinoa in just one pot!

A one pot meal made with chicken thighs, quinoa, Brussels sprouts, garlic, and onion.

Season & Sear

First, generously season your bone-in chicken thighs with chicken seasoning. Then, sear them in butter for a few minutes on each side in your Dutch oven. Remove and set aside.


Cook Brussels Sprouts

Deglaze the Dutch oven with white wine and then add garlic, onion, and Brussels sprouts. Sauté for a few minutes to partially cook Brussels sprouts.


Add Ingredients

Add in uncooked quinoa, broth, tomato paste, salt, pepper, and fresh thyme. Mix to combine everything together.



Place the seared chicken thighs on top of the Brussels sprouts and cover your Dutch oven. Bake at 400ºF for 20-25 minutes. Then, uncover and continue cooking for 5 more minutes.
