Eggplant parmesan is a healthy vegetarian meal made with fresh ingredients.

what you need:

Eggplant Panko breadcrumbs Egg Parmesan cheese Mozzarella cheese Marinara sauce

Prep Marinara

Heat olive oil over medium/high heat in a large pot or Dutch oven. Add onion and garlic and cook until fragrant.

Add Sauce

Add chunky tomato sauce, spices, and tomato paste and mix to combine. Bring to a boil.

Simmer

Let the marinara sauce simmer over low heat for 10-15 minutes to reduce and thicken.

Salt Eggplant

Place sliced eggplant onto a large baking sheet. Then, sprinkle with salt to draw out any excess moisture.

Prep Zucchini

Whisk eggs in a bowl and combine parmesan cheese with spices in a separate bowl. Dip eggplant in the egg wash and then dredge in cheese.

Pan Fry

Pan fry the eggplant in olive oil on both sides get them nice and crispy.

Assemble

Assemble eggplant parmesan by spreading sauce on bottom of casserole dish. Then, stack eggplant, cheeses, and marinara sauce. Repeat.

Bake and Enjoy!

Bake eggplant parmesan at at 400ºF for 20-22 minutes. Enjoy  with extra parmesan cheese and fresh basil.
