These make-ahead breakfast burritos are perfect for back to school or on-the-go!
what you need:
Tortillas Eggs Sausage Onion Bell Pepper Potatoes
First, cook your breakfast potatoes over medium/high heat in olive oil for 5 minutes. Add spices and cook for 3-4 more minutes.
Add additional veggies such as onion and bell peppers and continue to cook over medium/high heat.
Whisk eggs, salt, pepper, and milk. Scramble eggs over medium/high heat util fully cooked.
Assemble your breakfast burritos by layering refried beans, veggies, scrambled eggs, and breakfast sausage. Then, roll into a burrito.
