Whip up these veggie-packed freezer breakfast sandwiches for breakfast meal prep!

what you need:

Eggs Spinach Breakfast sausage Milk Sun-dried tomatoes Cheese English muffins

Bake Eggs

Combine scrambled eggs, sausage, wilted spinach, and sun dried tomatoes. Transfer onto a baking sheet and bake at 350ºF for 18-22 minutes.

Assemble

Slice the eggs into 8 pieces. Then, place a piece of cheese on top of the bottom of an English muffin. Top that with the egg and the top of the muffin.

Freeze

Wrap each breakfast sandwich in a piece of plastic wrap. Then, wrap it in tin foil. Freeze for up to 3 months.

Like things a little bit more basic? Skip all the add-ins and just bake scrambled eggs instead. Simple, yet delicious.
